Ingredients for Chole:
- 1 cup chickpeas (dried or bottled)
- 1 tbsp tea leaves
- 2 onions (sliced or chopped)
- 1 tsp grated garlic
- 1 tsp grated ginger
- 4 green cardamom
- a cinnamon finger
- 4 cloves
- 1 can chopped tomatoes or 4 fresh tomatoes (blended)
- 2 tsp chole masala (ready to buy)
- 1 tsp chili powder (or fresh chili)
- 1 tsp cumin powder
- 2 tsp coriander powder
- 2 tsp mango powder (amchur)
- Salt
How to make:
- Boil chickpeas and tea leaves until soft
- If it is cooked, remove and drain.
- Heat a little oil in a pan. When the oil is hot, add the cumin until it no longer sizzles.
- Add onions, fry until golden brown.
- Add the grated ginger and garlic, stir and cook until fragrant.
- Add tomatoes, cook over medium heat until fully cooked (approximately 10-15 minutes).
- Add the rest of the other spices such as salt, chole, hard-boiled eggs (if using). Stir well.
- Add water (approximately 1 cup or 1 small cup).
- Cook on low heat (approximately 10-15 minutes).
- Lift.
How to make Bhature:
Ingredients:
- 1/2 cup all-purpose flour
- 1/2 cup of mashed potatoes
- 1/4 tsp salt
- 1 1/2 oil
- Oil (for deep frying)
How to make:
- Mix all ingredients.
- Knead until smooth.
- Cover with a damp, clean napkin. Leave it for about 10 minutes.
- Divide the dough into 4 parts and round it. Mill with a diameter of 12.5 cm.
- Fry in really hot oil. Leave it until the bhature dough swells by itself and then flip it over until it turns brown.
- Remove and place on kitchen paper.
- Serve immediately with Chole.
