Khao phad is fried rice with egg and shrimp pudding. Usually served with chopped coriander leaves too.
Material:
- 3 servings of white rice left over from last night
- 400 grams of chicken fillet, cut into small cubes
- 2 chicken eggs, beaten
- 1 tablespoon garlic, finely chopped
- 1/2 large onion, sliced
- 5 tablespoons of cooking oil
- 5-7 pieces of cayenne pepper
- 1/2 teaspoon pepper powder
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 teaspoon sugar
- 1 tomato, chopped
- salt to taste
- scallion to taste, finely sliced
Complementary:
- enough lemon slices
- enough cucumber slices
- coriander leaves, finely chopped
How to Make Thai Fried Rice:
- Clean the chicken. Sprinkle with soy sauce and cornstarch. Leave it for 15 minutes.
- Scramble the eggs, then set aside.
- Heat the oil in a frying pan. Saute minced garlic and onion until fragrant.
- Add chicken, tomatoes, chilies, scallions, and scrambled eggs. Stir well.
- Add white rice; then season with fish sauce, pepper, salt, sugar, and lime juice.
- Cook until the rice is no longer wet. Make a taste correction. If it is according to taste, immediately remove from the stove.
